Ingredients:
500g mushrooms: Finely sliced
2 tbsp unsalted butter
2 tbsp olive oil
1 onion: Finely chopped
3 garlic cloves: Minced
2 tbsp plain flour
2 cups beef broth/stock
1 tbsp Worcestershire sauce
1 tsp soy sauce
Salt and pepper: To taste
Optional: Fresh thyme or parsley
Instructions:
Prepare Mushrooms:
Clean and slice/chop finely.
Cook:
Heat butter and oil over medium-high heat.
Add onions, cook until soft (3-4 mins).
Add garlic, cook until fragrant (1 min).
Add mushrooms, cook until golden brown (8-10 mins).
Make Roux: Sprinkle flour, cook for 1-2 mins.
Add Broth: Pour in broth, stir to avoid lumps.
Add Worcestershire and soy sauce.
Simmer: Simmer 5-10 mins until thickened. Adjust with broth if needed.
Season: Add salt, pepper, and optional herbs.
Serve: Over mashed potatoes, meats, veggies, or biscuits.
Tips:
Use mixed mushrooms for depth.
Adjust thickness with broth.
Store in fridge (3 days) or freezer (1 month)
