Sticky Date Pudding with Butterscotch Sauce 🍮

It’s everything you want in a pud—soft, rich, drenched in sauce, and
just the right amount of sweet 🍯✨.

This is the kind of dessert that makes you feel like you’re at your Nan’s place 🏡, with the smell of caramel bubbling away and the promise of something warm and decadent coming out of the oven 🔥.
💛 What makes it so good?
Two words: butterscotch sauce 😍. Pour it over while the pudding’s still warm and it soaks right in, making every bite sticky, soft and indulgent. The chopped dates add a natural sweetness and keep the sponge super moist, without being overpowering. It’s the kind of dessert that gets better with every spoonful—and yes, it reheats like a dream 👌.
🛒 What you’ll need:
For the pudding:
200g pitted dates, chopped
1 tsp bicarb soda
250ml boiling water
60g butter, softened
150g brown sugar
2 eggs
180g self-raising flour
1 tsp vanilla extract
For the sauce:
150g brown sugar
100g butter
300ml thickened cream
👩🍳 How to make it:
Preheat the oven to 180°C (160°C fan-forced)
Place the chopped dates and bicarb soda in a bowl. Pour over the boiling water and let it sit for 10 minutes to soften
Cream the butter and brown sugar until light and fluffy
Beat in the eggs, one at a time
Add in the flour, vanilla, and the date mixture. Stir gently until combined
Pour into a greased baking dish or ramekins and bake for 30–35 minutes
While the pudding’s baking, make the sauce: melt the butter, sugar and cream in a saucepan over medium heat. Stir until smooth and just starting to bubble
As soon as the pudding’s out of the oven, pour over some of the warm sauce and let it soak in
Serve with extra sauce and a scoop of vanilla ice-cream (or whipped cream if that’s more your style 😉)
